Each day, there are cups clinking, coffee brewing, and friendly chatter drifting from Proud Mary Coffee Roaster and Cafe in Collingwood. The cafe maintains a welcoming and airy ambience, even on a signature grey and rainy day in Melbourne.

Inside, there’s a wide range of coffee-brewing equipment displayed. Baristas also encourage patrons to pull up a chair and watch as they make the renowned Deluxe Pour Over coffees.

In addition to extensive brunch offerings, Proud Mary has a menu purely for specialty coffees which helps any reluctant coffee taster to step out of their comfort zone. Amongst the caffeine hits are the Cold Drip - Bourbon | Natural | Honduras, described as having notes of milk chocolate, raspberry and red apple.

Even without a sophisticated palate, the Cold Drip Coffee is superb. The flavour notes listed are perhaps not immediately apparent, but the red apple flavour clearly present by the end of the glass.

Proud Mary keeps on burning, with 14 years as one of Melbourne's go-to coffee haunts. Nolan and Shari Hirte opened the doors in 2009, aiming to bring “an amazing and heartfelt experience to all who enter.”

This work ethic and passion has earnt Proud Mary’s team various awards. Also, a strong reputation for training award-winning baristas. While, just last year, bringing Melbourne brunch culture to the US, by opening a new place in Austin, Texas.
